Rum

Rum has a history steeped in colonial times. Unlike today’s common rums our mountain rum is a return to the colonial tradition. We start with sugar cane molasses slowly fermented. Then we distill it in our handmade copper pot still twice, gently refining it. The result is, a surprisingly aromatic, full bodied rum that carries delightful aroma from the molasses it was made with. Mix your favorite rum cocktail without loosing the flavor of the spirit.

Spice

The spice rum is crafted by infusing with whole nutmeg, vanilla bean and cinnamon stick. As with all Dancing Pines products we use only the finest spice no extracts or flavorings. The result is rich, softly spicy, lightly sweet Rum.

Cask

After toiling over our traditional pot still rum we place it in the finest charred oak, allowing it to rest and age a bit. The result is a an unexpectedly mellow spirit reminiscent of the cane molasses from which it was made, perfect for sipping slow.
